Lessons/code for Pi 3b - can I use the Pi 5 lessons instead?

SunFounder Raphael Kit for Raspberry Pi and am going through the lessons using a Pi 3b.

I noticed that the lessons as written for the Pi 5 use a much improved (presumably newer) GPIO library module and I have been able to do the first three lessons just fine using the Pi 5 wiring and code. Are there any lessons where I can NOT use the Pi 5 information?

There are indeed some older platforms or features that do not support the Pi 5, such as Processing. However, for Python-related content, the Pi 5 lessons work fine. You can simply follow the tutorials under the Pi 5 category for your learning.
