If I shine a light from behind the camera it sees them just fine, but without a light, it is too dark for any recognition of colors or objects. My house has a lot of natural light as well as lights, but the PiCar-X camera can barely function.

I’m not sure if esp32 camera module is the same as Zeus car. I’ve take a look to camera module and I think there’s a LED mounted on it D1.
I’ve ask to sunfounder programmers to add codes to control LED with sunfounder controller app. Maybe if you analyze codes of Zeus car and copy it to picar-x. You can found them at GitHub - sunfounder/zeus-car: SunFounder FPV Omni Car for Arduino and GitHub - sunfounder/picar-x
It might be a possibility. It looks like it is intended to be a flash for the camera, but it might work as a flashlight.
I think the PiCar-X includes the V1 2013 camera that was discontinued. I ordered a V2 and V3 which should be compatible with the same code to see if they work better.
Please confirm if the FFC cable is properly connected to the Raspberry Pi and the camera module.
Please try a spare FFC cable to see if it resolves the issue. Does the same situation occur?
